Owner Amine khoury said he thinks the reasons for the 8-month old eatery's ascent are simple. "It's the freshness of the food," he said. "It's authentic but Americanized, a fusion of Mediterranean ingredients put together in a healthy way for sandwich lovers, etc. Everything is just very fresh and healthy." one key appeal is Khoury's specialty: the meat for shawarma and gyros. "Most places have it come in frozen and processed, "he said. "We don't do that. We marinate fresh meat here, which keeps it juicy and tasty." that meat is also used in numerous traditional and inventive ways, such as a Mexican take on the classic Middle Eastern dish. But a variety of sandwiches, salads and specialties beckon as well, with equal freshness and focus on health and convenience."
